Chicken Parmesan Pizza for #SundayFunday

For today's lovely Sunday gathering, Stacy from Food Lust People Love challenged us to write our own food poetry!! I think this is an incredibly creative and fun theme - I am feeling challenged in my ability to access the proper creative channels, but after much deliberation, I present to you:
Ode to Poultry
Chicken in the morning
Start the day off right
I eat eggs for breakfast
When the sun is shining bright
Lunch or dinner? Chicken
Chicken every day
I sound like Bubba Blue
I'll eat chicken any way!
Ok that's the extent of my food poetry!
Luckily for you (and for me!) my chicken parm pizza is much better than my ode to chicken. This was a great way to merge a couple favorites together into a delicious, total comfort food meal. I had some breaded chicken leftover from a recent sandwich recipe and highly recommend this recipe if you're thinking about making your own breaded chicken and don't already have some leftover or frozen. I even made a quick TikTok video for this one!

Chicken Parmesan Pizza
Ingredients
1 pizza dough ball (see recipe below)
3/4 - 1 cup marinara sauce
2 cups breaded chicken pieces (cooked and warmed - I used the chicken from this recipe)
2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese
2-3 tsp dried basil
Directions
- Roll out the pizza dough to fit your pizza pan. Cover and allow to rest about 30 minutes, until puffy.
- Preheat oven to 425 degrees.
- Cover the pizza dough with marina sauce, sprinkle the chicken on, and cover with mozzarella.
- Bake 15-18 minutes, until golden brown and baked through. Allow to cool 5-10 minutes before slicing. Sprinkle parmesan and basil all over before serving.
Oregano Garlic Pizza Dough
Ingredients
1 cup warm water
1 envelope (2 1/4 tsp) active dry yeast
1 Tablespoon honey (optional)
1 Tablespoon extra virgin olive oil
1 Tablespoon dried oregano
1/2 Tablespoon garlic powder
1 teaspoon salt
3 cups all-purpose flour
Directions
- Combine warm water, yeast, and honey in the bowl of a stand mixer. Whisk to combine then set aside for about 8 minutes until yeast is activated.
- Add in remaining ingredients and fit the mixer with the dough hook. Set to medium-high speed and allow dough ball to form. Once it forms, set speed between medium / medium-high and allow to knead about 3 minutes until dough looks smooth.
- Remove dough from bowl and add some olive oil to the bowl. Return dough ball, and flip, so that both sides are lightly coated in oil. Cover with a tea towel and set aside to rest about 1-2 hours, until well risen.
- Punch down dough and continue with recipe above.
