Meal Plan ~ Week of June 15th
For this week's recipes, I've gone back through my various Secret Recipe Club posts and pulled inspiration from recipes I linked that I wanted to try but haven't gotten around to!
Monday
Dinner: Pepperoni Stuffed Chicken, Roasted Garlic Mac N Cheese, green beans
Ingredients to have on hand for this recipe
For the chicken: boneless, skinless chicken breasts, spinach, Parmesan cheese, pepperoni, parsley, seasoned bread crumbs, olive oil, salt and pepper
For the mac n cheese: butter, panko breadcrumbs, chives, head of garlic, olive oil, pasta, flour, milk, cheddar cheese, Parmesan cheese, ground mustard powder, salt, pepper
Tuesday
Dinner: Crispy Avocado BLT Salad (with grilled chicken)
Ingredients to have on hand for this recipe
Field greens or spring mix lettuce, tomatoes, shaved Parmesan cheese, bacon, honey, balsamic vinegar, minced garlic, lime juice, salt, pepper, ranch dressing, sriracha sauce (optional: additional protein - shrimp, grilled chicken, etc. if desired to serve over or next to salad).
Wednesday
Dinner: Italian Pot Roast with Mushroom Sauce, Buttermilk Ranch Potatoes, roasted carrots
Ingredients to have on hand for this recipe
For the roast: 3 lb beef roast, olive oil, beef broth, red wine, garlic, Italian seasoning, sliced mushrooms, onion, carrots, celery, parsley, tomato sauce, salt, pepper, butter, olive oil, flour
For the potatoes: potatoes, buttermilk, butter, ranch seasoning, salt, pepper
Thursday
Dinner: Honey Lime Chicken Enchiladas, Black Beans and Rice
Ingredients to have on hand for this recipe
Enchiladas: chicken, honey, lime juice, chili powder, garlic powder, salt, enchilada sauce, heavy cream, Mexican-blend shredded cheese, flour tortillas
Black Beans and Rice: olive oil, onion, minced garlic, rice, chicken broth, salt, cumin, black beans (can)
Friday
Dinner: LEFTOVERS
Saturday
Breakfast: Banana Oatmeal Pecan Breakfast Bars
Ingredients to have on hand for this recipe
AP flour, whole wheat flour, baking soda, vanilla powder (sub regular vanilla), salt, canola oil, brown sugar, eggs, bananas, oats, chia seeds (optional), pecans
Lunch: Cheddar Broccoli Soup, Danish Oat Loaf
Ingredients to have on hand for this recipe
Soup: Broccoli, milk, chicken broth, butter, wheat flour, cheddar cheese
Bread: Oats, milk, unsalted butter, salt, active dry yeast, water, bread flour
Dinner: Ultimate Totchos
Ingredients to have on hand for this recipe
Tater tots, Mexican blend cheese, black beans, sour cream, avocado, pickled jalepenos (optional), sliced black olives (plus additional toppings as desired - sliced tomatoes, lettuce, etc.)
Dessert: Chewy Cocoa Brownies
Ingredients to have on hand for this recipe
Sugar, unsalted butter, salt, eggs, vanilla extract, cocoa powder, whole wheat flour, chopped nuts, milk, semi-sweet chocolate chips
Sunday
Breakfast: Breakfast Skillet, scrambled eggs
Ingredients to have on hand for this recipe
Sugar, unsalted butter, ground cinnamon, can of buttermilk biscuits, butter, brown sugar, fruit (dried, fresh, or frozen), small apple
Lunch: Steak Sandwiches, chips, raw veggies
Ingredients to have on hand for this recipe
Onions, canola oil, salt, butter, boneless rib steak, olive oil, pepper, mozzarella cheese, barbecue sauce, hoagie buns
Dinner: BBQ Chicken French Bread Pizzas
Ingredients to have on hand for this recipe
Loaf french bread, red onion, rotisserie chicken, sharp cheddar cheese (optional: sauteed onions, peppers, mushrooms, etc.)
Great inspiration there using SRC posts. Wonderful idea.
ReplyDeleteThere are always so many dishes I want to try and then they get lost when I move on to the next month's assignment, so I'm excited to try to get around to some of these yummy recipes this week!
