Today's dish is super simple, and completely "summer" in a bowl. I adore veggie pasta salad. We typically use Italian dressing as the base and sometimes I add olives or some mozzarella. The ingredients below combined beautifully for a light, refreshing, satisfying side dish. The T.Lish vinaigrette / marinade is perfection. I've tried two of the three sauces I was sent so far, and I can't say enough good things about these products. They are absolutely delicious and incredibly versatile.
I will definitely be making this again, and next time I will be marinating some chicken breasts in the T.Lish garlic sauce, grilling the chicken, and serving that warm over the pasta salad - I think that will take this dish over the top and be a wonderful, all-in-one meal for any summer afternoon.
Cool, refreshing watermelon is the perfect accompaniment to this dish!
Garlic Veggie Pasta Salad
Ingredients
2 cups cooked, cooled pasta (I used penne)
1 small carrot, peeled and diced into thin rounds
1 small stalk celery, diced
8 cherry tomatoes, quartered
1/2 ripe avocado, diced
3 - 4 TBS T.Lish Sweet Garlic sauce
1/2 TBS grated parmesan
1 TBS diced real bacon bits
Directions
- Combine first 6 ingredients and toss well to combine, sprinkle parmesan and bacon bits over the top and serve.

Oooo heck yea that dressing was awesome! I can only imagine how good it was in this pasta salad.
ReplyDeleteI an so crazy about that sweet garlic dressing and then last night I made a pasta using the Asian Sesame dressing.....oh, Rebekah....wait until you try that!!
