Cornbread Muffins
We love cornbread! It's such a great accompaniement to so many different dishes - for us usually alongside chili. And definitely for brunswick stew which was on the menu this week. I thought muffins would be the perfect version of cornbread to serve alongside the stew. Already individually portioned, and easy quick clean up.
Slightly sweet cornbread with a moist / tender crumb is definitely my favorite, and these muffins were just right. Just a touch of sweetness, tender and not too crumbly with a nice golden brown top. I split mine open and enjoyed with a little butter and honey. Absolutely delicious!
This was a good weekend meal and project for me on a cold and tired evening! The stew cooked pretty much all day hands off in the crockpot, and these come together really quickly and bake up fast. Perfect for a busy or just low energy day which I feel like sums up my whole weekend. There's so much going on with Lindsey's schedule and we were at a car show until about 10pm Saturday night (which for me is way past bedtime lol)!
I easily halved the recipe below and made just 6 muffins instead of the full 12 (I used a full egg still, but halved everything else). It's a great option if you're serving a smaller group, or don't want too many leftovers (not that they ever last too long at our house)!
Cornbread Muffins
Makes 12 muffins
Ingredients
½ cup unsalted butter

1 ¼ cups yellow cornmeal
1 cup all-purpose flour
2 teaspoons baking powder
⅓ cup granulated sugar
¾ teaspoon kosher salt
¾ cup milk
1 large egg
3 tablespoons honey

Directions
- In a medium bowl, melt the butter and allow to cool slightly. Whisk in the cornmeal, flour, baking powder, sugar, salt, milk, egg, and honey.
- Line a 12-cup muffin tin with paper liners, and spray the liners lightly with cooking spray. Divide batter between cups.
- Bake 15 - 18 minutes, or until golden brown and a toothpick inserted into the middle comes out clean.
- Enjoy warm with some butter and honey, if desired!
