Applesauce Bread
This is a recipe I've made a couple times now and it comes out beautifully each time! I sometimes buy applesauce because it sounds good, or someone requested it, and then it sits in the refrigerator partially eaten. This is the perfect recipe to use up unclaimed applesauce if you too have some laying around!
It's lightly seasoned and has a subtle apple flavor. It's just a lovely quick bread - perfect as a snack, or breakfast alongside your favorite tea or coffee. I lov it warm with a little bit of butter.
Applesauce Bread
makes 2 loaves
Ingredients
4 large eggs at room temperature
1 1/2 cups granulated sugar
3 cups applesauce, at room temperature
2 sticks (8-oz) butter, melted and slightly cooled
3 cups all-purpose flour
1 TBS baking soda
1 teaspoon salt
1 TBS ground cinnamon
Directions
- Preheat the oven to 350 degrees and spray 2 9x5 loaf pans with baker's spray or nonstick cooking spray.
- In the bowl of a stand mixer, beat the eggs with the sugar until light and creamy, about 3 minutes. On a lower speed, add in the applesauce, then the melted butter.
- On low speed, add in the baking soda, salt, and cinnamon and lastly the flour, blending just until all dry ingredients are blended into the wet.
- Scrape the batter evenly between the 2 prepared pans, and bake in the preheated oven for 55 - 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean (moist crumbs are fine, just nothing that looks "wet" still).
- Allow to cool in the pan for about 5 - 10 minutes, then turn out onto a wire rack to complete cooling,
- Serve warm with a pat of butter for a delicious treat!
- Store in a tupperware on the counter for up to 3 days - refrigerate if necessary.
