Ham and Brie Crostini with Jam for #SundayFunday

These are so tasty!! The crispy baguette slices, gooey brie and chewy slightly salty ham with that delicious fig jam. It's just reallllly happy together. I was envisioning using this as a base for poached eggs for an iteration of eggs benedict too. I ate my fair share of these. They're easily adjusted to any size of baguette / bread base and you could use other jam flavors but the fig is really lovely with the brie.

  • Ham and Brie Crostini with Jam

    Ingredients
    24 (1/4-inch thick) baguette slices
    1/4 - 1/2 cup extra virgin olive oil 
    3/4 pound ham slices, cut into 24 pieces
    9 ounces Brie cheese, sliced and cut into 24 pieces
    1/4 cup fig jam

    Directions
    1. Preheat oven to 400 degrees. Place baguette slices on a baking tray or two (to fit without crowding). Brush both sides of slices with olive oil and bake 10-12 minutes or until toasted.
    2. Divide the slices of cheese and top with ham on each baguette slice and bake another 5-8 minutes or until cheese is melted. 
    3. Add a drizzle of jam to each crostini and serve warm!
