Christie from A Kitchen Hoor's Adventures said: Mardi Gras is February 16. Let's celebrate in style with some delicious Cajun inspired recipes. King Cake, boudin, gumbo, andouille, jambalaya, and anything with crawfish just to name a few ideas.


This was such an easy way to whip up a "shrimp boil" in the oven! All of that flavor, and just a couple tosses in the pan and voila. Dinner is on the table and you can dish it up, or just let people pick out of the baking dish. 

The flavor was wonderful - and this was eaten up in no time at my house. Perfect warming flavors for cool weather!

Cajun Shrimp Bake

Ingredients
13-oz andouille sausages, chopped
1 lb shrimp, peeled and deveined
4 medium potatoes, diced
4 pieces corn, halved
2 Tablespoons oil, divided
2 TBS minced garlic, jarred
1 TBS butter, softened

Cajun Spice Mix
2 teaspoons garlic powder
2 ½ teaspoons paprika
1 ¼ teaspoons dried oregano
1 teaspoon onion powder
1 ¼ teaspoons dried thyme
½ teaspoon red pepper flakes
1 teaspoon cayenne pepper
2 teaspoons salt
1 teaspoon pepper

OPTIONAL
fresh parsley, chopped
lemon wedge, to garnish

Directions
  1. Preheat oven to 375 degrees. Spray a 9x13 baking dish with nonstick cooking spray. 
  2. In a medium bowl, combine the Cajun spice mix ingredients and stir to combine.
  3. Arrange the diced potatoes, corn pieces, and sausage pieces in the baking dish. Sprinkle with 1/2 TBS of the spice mix, 1 to 1/2 TBS of olive oil, and about 1 1/2 TBS minced garlic. Toss mixture gently to evenly coat everything with the oil and spice mix.
  4. Bake in the preheated oven for 1-hour, until potatoes and corn are almost completely cooked through.
  5. Meanwhile, combine the shrimp with remaining oil, remaining minced garlic, and 1/2 TBS of the seasoning mix and toss to combine, setting aside in a bowl.
  6. After potato / corn mixture is almost completely cooked through, arrange the shrimp over the top of the baking dish, and return to the oven for 15 more minutes, until the shrimp are fully cooked through.
  7. When everything is baked through, toss once more and brush the softened butter over everything (especially the corn) and allow it to melt.
  8. Serve with a squeeze of lemon and sprinkling of parsley (if desired) and enjoy!
