Applesauce Muffins with Cinnamon Streusel Topping
This recipe comes from MyRecipes.com and we really enjoyed it! They are very "coffee cake" like in taste and texture and go great with a pat of butter in the middle, or on top. We served these with fresh fruit salad for a very tasty breakfast treat over the weekend!

Makes 17-18 muffins
Ingredients
4 cups all-purpose baking mix (I used Bisquick)
1/2 cup sugar
2 teaspoons ground cinnamon
2/3 cup (generous) applesauce
1/2 cup milk
1/4 cup vegetable oil
2 large eggs

4 cups all-purpose baking mix (I used Bisquick)
1/2 cup sugar
2 teaspoons ground cinnamon
2/3 cup (generous) applesauce
1/2 cup milk
1/4 cup vegetable oil
2 large eggs
Cinnamon Streusel Topping
1/3 cup sugar
1/4 cup packed light brown sugar
3 tablespoons all-purpose baking mix
1/4 teaspoon ground cinnamon
2 tablespoons butter, melted
Instructions
- Preheat oven to 400 degrees. Grease 18 regular sized muffin cups.
- Whisk together the baking mix, sugar, and cinnamon in a large bowl; make a well in center of mixture.
- Whisk together the applesauce and next 3 ingredients in a small bowl; add to sugar mixture, stirring just until dry ingredients are moistened. Spoon batter into prepared muffin pans, filling about 2/3 full.
- Create cinnamon streusel topping by whisking together the first 4 topping ingredients until blended. Stir melted butter into the sugar mixture until well blended and crumbly. Evenly distribute the streusel topping over the muffin batter.
- Bake at 400 degrees for 18 minutes or until a wooden pick inserted in the center comes out clean and tops are golden brown. Cool in pan on a wire rack for about 5 minutes and then remove from pan to a wire rack. Serve while warm or allow to cool.
