Quick and Easy Velveeta Macaroni & Cheese
I saw the original recipe for this one on Coleen's Recipes (she has so many fantastic recipes there!) and she originally saw it on Better than Burgers (who calls it a Mock KFC Mac 'n Cheese recipe)! This is a very quick and easy macaroni and cheese recipe that was a great addition to our chicken dish the other night. My son absolutely adored this recipe and is very much looking forward to the leftovers! Personally, I found the Velveeta flavor a tad overwhelming; it was a little thick and sticky with Velveeta, and I would add a little more liquid and cut back on the Velveeta for my own personal tastes next time. Overall though, the texture was lovely, sticky, and creamy; it was just really rich tasting. It would be very easy to tweak to your personal preferences, just start with a little less, and add more to taste!
Coleen's recipe called for 1/2 tsp dry mustard powder which I forgot and left off, but I think that would be a very nice addition to the recipe as well.

Ingredients
2 cups of elbow macaroni noodles
6-8 ounces of Velveeta cheese, cubed
1 cup shredded cheddar cheese
1/2 - 3/4 cup of milk
1/4 - 1/2 tsp salt
1/8 tsp black pepper

Ingredients
2 cups of elbow macaroni noodles
6-8 ounces of Velveeta cheese, cubed
1 cup shredded cheddar cheese
1/2 - 3/4 cup of milk
1/4 - 1/2 tsp salt
1/8 tsp black pepper
Directions
- In a medium saucepan, bring about 6-8 cups of water to a boil and add the macaroni noodles. Boil for 10 minutes or until tender.
- Meanwhile, in a separate saucepan, combine Velveeta cheese (to taste), cheddar cheese, milk, and seasonings over medium heat. Stir frequently until Velveeta is completely melted and blended in, and you have a creamy cheese sauce.
- Drain cooked macaroni noodles, and stir into sauce. Add more milk if needed to achieve the desired consistency and taste.
