Snickers Bar Peanut Butter Cookies
Another Holiday Baking cookie for the blog! :) Fixed these this afternoon after we went out and saw Twilight Breaking Dawn Part I - Kenneth suffered through it because he loves me so much! :D I appreciated it very much and enjoyed the heck out of some buttered popcorn! We picked up a couple groceries after inching our way through the CRAZY traffic around here! Everyone apparently remembered it's Christmas in a couple days and decided to shop this afternoon! Geez! We got what we needed at Kroger and headed on home and I've been baking ever since!
I use Stevia in place of white sugar and refrigerate the dough between batches - it's pretty soft and greasy and you have to roll each cookie in your hands to make sure it evenly coats the miniature snicker bars, so it helps to have the dough chilled!
These are great cookies and come out beautifully every time! I always bake for just 13 minutes per batch.

Snickers Bar Peanut Butter Cookies
Makes: 2-3 dozen cookies
Ingredients
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 cup butter
1 teaspoon vanilla extract
1/2 cup peanut butter
1 egg
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
24-36 miniature size Snicker Bars (original or use a mixed bag with dark, almond, etc.)
Directions
- Cream together white sugar, brown sugar, butter or margarine, vanilla, peanut butter and the egg.
- Add in flour, baking soda, baking powder, and salt.
- Wrap 1 heaping teaspoon of dough around a bite sized milk chocolate covered caramel and nougat candy bar. Bake 13-16 minutes at 350 degrees F. Let cool 5 minutes before removing from pan.
