Crock Pot Beef Stew
And yet another crock pot beef stew recipe! :) This is one of the few "soups" my husband will let me make without too much complaint. He is just not a soup/stew guy, even though this is very "meat and potatoes"!
The original recipe has several additional steps, including sauteing the onions and browning the meat, but I took the easy route and toss everything straight into the crock pot and enjoy this one very much! I often use half sweet potatoes and half regular potatoes and sometimes add in mushrooms as well. We usually serve stew with a nice hearty Irish soda bread.

Ingredients
3 pounds cubed beef stew meat
1/4 cup all-purpose flour
1/2 teaspoon salt, or to taste
1 cup baby carrots or 3-4 medium carrots, peeled and diced into chunks
4 large potatoes, cubed
1 tablespoon dried parsley
1 teaspoon ground black pepper
2 cups hot water
1 (1 ounce) package dry onion soup mix
1 large onion, diced
1/4 cup red wine or beef broth
Directions
- Place meat in crock pot with 1/4 cup flour and 1/2 teaspoon salt; stir together until combined well.
- Add the carrots, diced onion, potatoes, parsley, and pepper, water, red wine or beef broth, and dry soup mix to the slow cooker.
- Cover, and cook on low for 8 hours, or until meat is fork tender.
