Barbecued Pork Chops
It's been a busy week around here! Kenneth is adjusting to his new late shift schedule and commuting from home 4 days a week (which is awesome) and I've been on the search for a job the past couple weeks. I had 2 interviews this week, and really liked the company I interviewed with yesterday so fingers crossed. :) Hopefully I'll hear something back by next week.
We've had a LOT of pork from our last CSA box so we had another round of pork chops recently. They came out very good, Kenneth and Kent really enjoyed them! We're ready for some chicken or beef around here! :)

Ingredients

Ingredients
4-6 (1/2 inch thick) boneless pork chops
1 medium onion, chopped
1/2 cup chopped celery
1 cup ketchup
1/2 cup water
2 tablespoons lemon juice
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon ground mustard
Directions
- Heat 1 TBS of oil in a large non-stick skillet over medium-high heat. Brown chops on both sides (2-3 minutes per side).
- Add diced onion and celery to pan, allow to saute about 5-10 minutes or until starting to brown and they're tender-crisp.
- Meanwhile, combine sauce ingredients - ketchup, water, lemon juice, brown sugar, Worcestershire sauce, salt, and mustard. Stir well.
- Pour sauce ingredients into pan, stir gently. Cover with a lid and reduce heat to low, maintaining a low simmer. Simmer for about 1 hour or until chops are cooked through and tender.
- Serve with sauce.
