Saltine Toffee Cookie Bars
This recipe makes a huge batch of salty sweet cookie bars! They are thick and chewy with crisped edges, and full of bits of toffee, crackers, and chocolate. It's a lovely combination.
Saltine Toffee Cookie Bars
Ingredients
1 1/4 cups white sugar
1 cup unsalted butter, softened
2/3 cup packed light brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
3/4 teaspoon baking soda
1 3/4 cups miniature semisweet chocolate chips, divided
1 1/4 cups miniature saltine crackers, slightly crushed and divided
3/4 cup toffee bits, divided, such as Heath® Bits of Brickle
Directions
- Preheat the oven to 350 degrees, and spray a 9x13 baking dish with nonstick cooking spray.
- In the bowl of a stand mixer, beat the sugar, softened butter, and brown sugar until light and fluffy and well combined (about 2 - 3 minutes). Add the eggs 1 at a time with the mixer on low speed, just until combined. Add in the vanilla extract.
- In a separate bowl, combine dry ingredients: flour, baking powder, salt, baking soda. Whisk to combine. Add dry mixture into the the butter mixture, just until combined. Add in 1 1/2 cups of the chocolate chips, 1 cup of the crushed crackers, and 1/2 cup of the toffee bits and mix briefly just unitl combined (or stir by hand if you don't want to break up the crackers further).
- Scrape the dough into the prepared baking dish and smooth the top, then sprinkle with remaining chocolate chips, saltine crackers, and toffee bits. Press gently into the dough to help toppings adhere.
- Bake in the preheated oven until cooked through - about 30 - 35 minutes. Cool completely in pan (at least an hour), before slicing and serving.
