Easy Birthday Cake #SundayFunday

This was such a good basic white cake recipe, and the sprinkles made it extra fun! I loved the creamy vanilla frosting with the flavor of the cake. It is easy to change this one up with any type of sprinkle you'd like.

Easy Birthday Cake

Ingredients
1 1/2 cups sugar
1/2 cup butter, room temperature
1 tsp vanilla
1 1/2 cups milk
3 eggs
2 1/4 cups all-purpose flour
3 tsp baking powder
1 tsp salt
Optional: sprinkles

Buttercream Icing
1/2 cup butter, room temperature
2 tsp vanilla extract
3 cups confectioner's sugar (sifted)
2-4 TBS milk
Optional: sprinkles

Directions
  1. Preheat the oven to 350 degrees and spray a 9x13 baking pan with nonstick cooking spray then set aside.
  2. In the bowl of a stand mixer, cream the butter and sugar together until lightened in color (a few minutes). Add in the eggs, milk, and vanilla and blend just until combined. 
  3. In another bowl, combine the dry ingredients: flour, baking powder and salt. Whisk to combine. With speed on low, blend the dry ingredients into your wet mixture, just until combined.
  4. Add in about 1/4 cup of sprinkles (more / less to your preference and taste). Stir gently to blend in.
  5. Scrape batter into the prepared baking pan, and bake 30 - 35 minutes, until top is lightly golden brown, and a toothpick inserted into the center comes out clean.
  6. Set on a cooling rack and allow to cool completely before frosting.
  7. When ready to frost, combine the room temperature butter with the sifted confectioners sugar in the bowl of a stand mixer and whip until sugar and butter are well combined. Add in the vanilla and just enough milk to reach a spreadable consistency.
  8. Frost the cooled cake, sprinkle as desired, and enjoy!
  9. Refrigerate leftovers.
