Easy Birthday Cake
Ingredients
1 1/2 cups sugar
1/2 cup butter, room temperature
1 tsp vanilla
1 1/2 cups milk
3 eggs
2 1/4 cups all-purpose flour
3 tsp baking powder
1 tsp salt
Optional: sprinkles
Buttercream Icing
1/2 cup butter, room temperature
2 tsp vanilla extract
3 cups confectioner's sugar (sifted)
2-4 TBS milk
Optional: sprinkles
Directions
- Preheat the oven to 350 degrees and spray a 9x13 baking pan with nonstick cooking spray then set aside.
- In the bowl of a stand mixer, cream the butter and sugar together until lightened in color (a few minutes). Add in the eggs, milk, and vanilla and blend just until combined.
- In another bowl, combine the dry ingredients: flour, baking powder and salt. Whisk to combine. With speed on low, blend the dry ingredients into your wet mixture, just until combined.
- Add in about 1/4 cup of sprinkles (more / less to your preference and taste). Stir gently to blend in.
- Scrape batter into the prepared baking pan, and bake 30 - 35 minutes, until top is lightly golden brown, and a toothpick inserted into the center comes out clean.
- Set on a cooling rack and allow to cool completely before frosting.
- When ready to frost, combine the room temperature butter with the sifted confectioners sugar in the bowl of a stand mixer and whip until sugar and butter are well combined. Add in the vanilla and just enough milk to reach a spreadable consistency.
- Frost the cooled cake, sprinkle as desired, and enjoy!
- Refrigerate leftovers.
