Maple Dijon Bacon Green Beans #SundayFunday

Today our #SundayFunday group is hosted by Camilla of Culinary Cam who said "Maple Syrup Saturday is March 21st. Ahead of that, let's share some recipes that use maple syrup in creative ways. Think salad dressings, glazes for roasts or desserts. Anything goes! I'll even take your favorite pancake recipe."


This is a super easy and absolutely delicious side dish to whip up alongside your favorite protein. The combination of dijon, maple, and bacon really can't be beat. We use a variation of this or brussels sprouts with pretty much the same ingredients oftentimes with our holiday meals. I made these green beans to go with a delicious sweet and spicy pork tenderloin not to long ago and it was really the perfect accompaniement. They are sweet and salty in all the best ways!

Maple Dijon Bacon Green Beans

Ingredients
1 lb fresh green beans, trimmed
6-oz bacon
1/4 cup pure maple syrup
2 TBS Dijon mustard
Salt and pepper to taste

Directions
  1. Bring a large pot of salted water to a boil and simmer green beans for 7 - 8 minutes or until crisp tender.
  2. Meanwhile, cook the bacon in a large nonstick skillet. Once cooked through, remove bacon and drain on papertowels. Pour off all but about 1/2 TBS of bacon grease.
  3. Drain the beans and turn the heat to medium / medium-high under the large skillet with bacon grease. Add in the green beans. Pour the maple syrup and dijon mustard in, and season with a little bit of salt and pepper. Toss the beans gently until evenly combined and the mustard and maple syrup has combined into a sauce coating the green beans. 
  4. Dice the bacon, and add into the green beans, tossing to coat one more time.
  5. Taste and adjust seasonings if needed.
  6. Serve immediately.
