#FoodieExtravaganza ~ Peanut Butter Chocolate Bread

Foodie Extravaganza is a monthly food fest, where a group of bloggers all create and share a recipe around one of the monthly food 'holidays' as detailed in The Nibble. This month Sneha from Snehas Recipe is hosting, Peanut Butter is our theme. Posting day is always the first Wednesday of each month. If you are a blogger and would like to join our group and blog along with us, come join our Facebook page Foodie Extravaganza. We would love to have you! This is a delicious batch of peanut butter infused, chocolate chip studded, banana bread. I found 55 minutes to be a little bit too long - I thought the bottom of my loaves were just a little over done, but otherwise these came out beautifully. The banana flavor increases overnight. The peanut butter is subtle and I really liked the combination of the banana along with the peanut butter and chocolate. This bread works well together, and the texture is tender with a slightly crisp crust.

4 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1/4 teaspoon salt
6 very ripe bananas, mashed
1 1/2 cups semi-sweet Chocolate chips

  1. Preheat oven to 350 degrees F.  Grease two (2) 9x5-inch loaf pans.
  2. In a large bowl, cream butter, peanut butter, and sugar until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Blend in flour, baking powder, baking soda, and salt; stir until dry ingredients are moistened.  Fold in bananas.
  3. Reserve 1/4 cup chocolate chips; set aside.
  4. Gently fold the remaining chocolate chips into the banana bread batter.  Pour the batter into the prepared bread pans filling about 3/4 full.  Sprinkle the top of the loaves with the remaining chocolate chips.
