Famous Velveeta Queso Dip
You don't have to use a crock pot to make this easy, cheesy treat - but I like to because it keeps it at the right temperature so it doesn't congeal right after you make it, and is the perfect way to serve this dip at a get together; just keep it on low in the crock pot and serve chips next to it with a little ladle or serving spoon in the crock pot for dipping the queso out with.
This queso is perfect for dipping tortilla chips in, adding to homemade nachos, or adding to your favorite tacos, burritos, enchiladas, etc. Lots of way to use this creamy lightly spiced sauce!
You can change it up by adding in ground beef and chilies depending on how hearty you want it, and how spicy!

Famous Velveeta Queso Dip adapted from Kraft
Ingredients
1 lb. (16 oz.) Velveeta, cut into 1/2-inch cubes
1 can (10 oz.) RoTel Diced Tomatoes & Green Chilies, undrained
Directions
- Combine ingredients in a crock pot set to low heat and check and stir 2 hours later. Continue cooking another 30 - 60 minutes if needed or until cheese has melted and ingredients can be stirred together.
- Keep warm in the crock pot on low for serving.
