This pizza is ahh-maa-zziinnnggg. Those juicy sweet peaches atop a bed of crispy, chewy, lightly cheesy dough with salty bites of prosciutto and a pop of fresh basil? We're still talking about this one. I don't buy prosciutto very often, but I already know this pizza will be making an appearance on our table again when fresh juicy peaches are back in season! 

Pizza is always a welcome treat, and when you ask me what's my favorite comfort food, or what's the dish I would choose to eat if I could only have one, or what food would I be stranded on an island with.. it's pretty much always pizza. I love how versatile pizza is! It's just a blank canvas waiting for your creativity.

Perfect Pizza Pie!

Caramelized Peaches and Prosciutto Pizza

Ingredients

Peaches
3 ripe peaches, pitted and sliced thinly
2 Tablespoons butter
2 Tablespoons light brown sugar

Pizza
Pizza dough
1 Tablespoon olive oil
2 cups shredded mozzarella
3-4 ounces sliced prosciutto
Caramelized peach slices
1/4 cup julienne sliced fresh basil

Directions
  1. Preheat oven to 500 degrees. Roll the dough out for a large rectangular baking sheet. Brush the dough with olive oil.
  2. Bake about 8-minutes until dough is starting to lightly brown.
  3. While dough is baking, prepare the peaches by melting the butter in a large nonstick skillet. Add in the peaches and cook gently for a few minutes. Add in the brown sugar and stir gently to blend the brown sugar into the butter. Carefully cook the peaches in the brown sugar sauce for a few minutes, until caramelized and tender (don't allow them to get too soft / fall apart). Turn heat off and set aside. 
  4. Remove the partially baked crust from the oven and cover with the shredded mozzarella cheese, distribute about 2/3 of the sliced prosciutto all over the cheese, and return to the oven until cheese has melted and crust is golden brown - about 6-8 more minutes.
  5. Remove from oven and immediately add remaining prosciutto, caramelized peaches (and drizzle a small amount of the sugary sauce over the top if desired), and sprinkle the fresh basil on.
  6. Rest a few minutes before slicing and serving!

Pizza Dough

Ingredients
2 1/4 teaspoons active dry yeast (one packet)
1 1/8 cups warm water
1 Tablespoon olive oil
1 Tablespoon honey
3 cups all-purpose flour
1 teaspoon salt

Directions
  1. Combine the warm water, yeast, honey, and olive oil in the bowl of a stand mixer. Set aside about 10 minutes, and allow yeast to activate. 
  2. When frothy, add in the salt and flour, place the dough hook on and allow dough to come together on medium speed. Knead on medium about 3 minutes.
  3. Remove dough ball from bowl, add about a teaspoon of oil, place dough ball in the oil and flip so both sides are lightly coated.
  4. Cover with a tea towel and set aside in a warm place to rise about 1 - 1 1/2 hours, until well doubled in size.
  5. Proceed with recipe above.
