Margherita Pizza with Sausage and Pesto


I had to opportunity to try out a CAULIPOWER crust in a recent AllRecipes brand ambassador campaign - and I loved getting the chance to try their product out!! I did learn that you should absolutely NOT bake these on a baking stone - but stick to a metal baking pan. I've noticed this before but for whatever reason I cannot get a fully "crisped" crust when I use my baking stone versus a metal pan. However, the edges of the crust came out beautifully crisped!


We LOVED the combination of ingredients - this was the perfect gooey, rich, saucy, cheesy pizza. The pesto just puts it over the top. I found Simple Truth brand chicken sausage links - they were really delicious in this recipe. Most any variety of sausage link in the cheesy / Italian flavor profile would work well here.


Definitely give this a try with your favorite crust soon - and if you're looking for lower carb options give Caulipower a try! I found mine at Kroger in the frozen pizza section.


Margherita Pizza with Sausage and Pesto from Christina on AllRecipes

Ingredients
1 CAULIPOWER(R) Cauliflower Pizza Crust
1 medium roma tomato, sliced into thin rounds
1/3 cup prepared pizza sauce
1 to 1 1/2 cups shredded mozzarella cheese
4 ounces fresh mozzarella cheese, sliced
1 link fully cooked Gruyere and spinach chicken sausage link, sliced in thin rounds
1/4 - 1/3 cup pesto sauce
3-4 TBS fresh basil leaves, julienned (optional)

Directions

  1. Preheat the oven to 425 degrees F.
  2. Brown the sliced sausage in a nonstick pan over medium to medium-high heat. Remove and set aside.
  3. Place pizza crust onto a baking sheet. Spread pizza sauce over the crust. Layer on the fresh tomato slices and sprinkle the shredded mozzarella over. Place the fresh mozzarella cheese slices and arrange the prepared sausage pieces. Dot evenly with pesto sauce. 
  4. Bake in the preheated oven until cheese is melted and crust is golden brown, 12 to 15 minutes.
  5. Remove from oven and immediately top with fresh basil.
