Crock Pot Beans 'n Wieners


This is a quick and easy crock pot baked bean dish - with the hot dogs you can use this as an entree, or serve alongside barbecue fair as a baked bean side dish! We enjoyed it both ways. If you aren't interested in the hot dogs, just omit those and you have a delicious and easy baked bean dish perfect for your summer cook outs and get togethers!

It's a lovely combination of sweet and tangy, and I loved the addition of the caramelized onion and tasty pieces of bacon mixed in. It keeps well in the crock pot on warm.

We had some leftover hot dogs in the refrigerator - which seems to happen every time I buy hot dogs. My daughter loves one or two of them, and then isn't interested in the rest of the package so I have to come up with something creative to use them in. This isn't usually an issue - I actually like hot dogs too and it's fun to find different ways to enjoy them. Smothered in chili is probably one of my favorite versions!


Crock Pot Beans 'n Wieners inspired by Food

Ingredients
4 thick cut slices of bacon
1 medium onion, diced
5 hot dogs, diced small
2 14-oz cans pork 'n beans
1 14-oz can pinto beans (or great northern), rinsed and drained
1/4 cup molasses
2 tsp yellow mustard
1/2 cup ketchup

Directions
  1. Fry the bacon in a large nonstick skillet, when crisped remove and set aside to drain on paper towels. Roughly chop once cool enough to handle
  2. Saute the onion in bacon grease until tender and they begin to caramelize - about 8-10 minutes.
  3. Add all ingredients to the crock pot, and cook on low for 5-6 hours.
  4. Taste and adjust seasonings if desired.
  5. Enjoy!
