Today our #SundayFunday group is hosted by Wendy from A Day In The Life On The Farm who said "Since this event falls on Easter Morning and many of us have been preparing our Feasts, I decided to ask for recipes that can be made in advance to lighten your load."
I always love holiday cooking and baking - it's usually a multiple day event for me - as I'm sure it is for many of you as well! The day prior (Saturday) was for baking - this gorgeous Lime Pound Cake, a cheesecake, and focaccia dough.
I made this cake first, earlier in the day, to be sure it would have plenty of time to cool. It is dense, and such a lovely golden brown, but so tender too. Just the right amount of tart lime flavor to compliment the rich buttery cake!
It's perfect for a get together like Easter, or something like a potluck. Simple ingredients, and it comes together quickly and is a wonderful, delicious, cake to share and enjoy.
Lime or carrot cake tend to be my "go to" flavors for Spring / Easter events. This would be delicious with a lime flavored cream cheese drizzle as well!

Key Lime Pound Cake
Ingredients
1 cup butter, softened
½ cup Crisco shortening
3 cups sugar
6 large eggs
3 cups all-purpose flour
½ tsp baking powder
⅛ tsp salt
1 cup milk
1 tsp vanilla extract
¼ cup lime juice
Lime Glaze
1 cup powdered sugar
2 TBS lime juice
Directions
- Preheat oven to 325 degrees, and grease a large tube pan or large bundt cake pan with Baking Spray (such as Baker's Joy).
- In the bowl of a stand mixer, cream the softened butter and shortening until creamy. Add in the sugar and whip again, until well combined and creamy.
- Add the eggs in, one at a time, blending well between additions.
- In a separate bowl combine the dry ingredients: flour, salt, baking powder. Whisk to combine. Add in the dry ingredeints, alternating with the milk, into the butter mixture until all is combined. Add in vanilla extract and lime juice last and blend just until combined.
- Place the prepared pan onto a baking sheet and scrape the batter into the pan.
- Bake for 1 hour 15 to 1 hour 20 minutes, or until cake is cooked all the way through.
- Set aside to cool in the pan for 10 - 15 minutes, then carefully turn out onto a cooling rack to complete cooling.
- When cake is mostly cool, prepare the glaze ingredients by whisking sifted powdered sugar together with the lime juice to create a thick but pourable glaze, and drizzle over the cake.
- Store covered on the counter for up to 24 hours, or refrigerate!
