Cottage Cheese Wraps

I've had this Viral Cottage Cheese Wrap on my radar for the longest time - I love cottage cheese but don't usually try to bake / cook with it. I usually just enjoy with some chilled canned peaches or pears and that's good enough for me!
I loved the idea of this as a lower calorie, high protein option and was curious how it would come out. The recipe is super easy, and very few ingredients. Also super easy to customize the flavor of the wrap - I would skip the Italian next time and stick with just the garlic / onion / salt and maybe some pepper unless I was doing Italian fillings.
I really liked the way this came out! I had issues with mine sticking to the silpat - definitely use parchment paper if you make this (I will be trying again soon and definitely using parchment)! Super quick, easy, and versatile. I filled mine with some chick fil a sauce, lunchmeat, and veggies, rolled it up and it made a great lunch. I didn't think the wrap tasted overly "eggy" or really all that "cheesy" either to be honest. It was pretty mild in flavor. The texture was soft, but definitely substantial enough to hold the fillings!

Cottage Cheese Wraps
Ingredients
1 cup Cottage Cheese (I used lowfat)
2 Eggs
1/2 teaspoon Onion Powder
1/2 teaspoon Garlic Powder
1/2 teaspoon Italian Seasoning
Dash salt
Directions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper (I don't recommend using a silpat in this one - I did it that way and it definitely stuck to it).
- Combine all ingredients in a small blender. Blend 1 - 2 minutes, or until very smooth.
- Pour mixture evenly onto your tray and gently shape the edges into roughly a rectangle (don't get the edges too thin - they will be crispy and it makes it a little more challenging to roll / fold).
- Bake in preheated oven 25 - 30 minutes until golden brown and cooked through. Allow to cool before removing. Cut in half and fill with your preferred sandwich fillings, and enjoy!
- Refrigerate the other half until ready to use.
