Chicken Alfredo Lasagna for #SundayFunday

She said: "I'm looking for layered casseroles that have a lasagna vibe so you can put a spin on your favorite lasagna recipe but add veggies or a spicy sauce. Change out beef for another protein source (fried tofu crumbles or ground turkey sauce, anyone?) or make a white sauce to layer with lasagna noodles and cheese for a seafood lasagna. OR make a traditional lasagna with meat sauce and cheese but replace the pasta layer with vegetables. The options are endless and I'll be happy with whatever you make that isn't just a random casserole like enchiladas or mac and cheese. I want lasagna layers!"

If you're looking for a creamy, indulgent recipe - you absolutely do not need to look any further than right here. This recipe is simple and just absolutely delicious. Layers of noodles, stuffed with creamy pasta, tender spinach and chicken. It's cozy, satisfying, and a wonderful twist on chicken alfredo and lasagna! To lighten it up, serve small pieces and serve alongside a crisp green salad. Or just do what we did, put a huge piece in a shallow bowl and savor every bite!


Chicken Alfredo Lasagna

Ingredients
2 TBS unsalted butter
1 TBS minced garli
1 medium onion, diced
10 ounces fresh baby spinach
4 cups heavy cream
1 1/2 -  2 cups grated parmesan cheese
15 ounces ricotta cheese
1/4 teaspoons black pepper
1 1/2 teaspoons salt
4 cups chopped cooked chicken 
12 cooked lasagna noodles
3 cups shredded mozzarella cheese

Directions
  1. Preheat the oven to 350 degrees.
  2. In a large nonstick skillet, melt the butter and saute the onion over medium heat (increase / decrease as needed) until onions are tender. Season lightly with salt and pepper. Add the garlic and saute another minute.
  3. Add in the fresh spinach, and stir until spinach wilts. Pour in the heavy cream, 1 1/2 cups grated parmesan, ricotta cheese, 1 tsp salt, and 1/4 tsp black pepper. Stir to combine and blend ricotta into the mixture.
  4. Add in the cooked chicken. Bring mixture to a low simmer and cook until thickened. It should not be overly soupy.
  5. Add additional cheese if needed to help thicken. Taste and adjust seasonings (add additional salt, pepper, garlic, and / or parmesan as desired).
  6. If mixture is still very loose, blend 1 TBS cornstarch with 1-2 TBS cold water in a bowl and blend until smooth. Whisk the mixture into the simmering sauce until thickened. Turn off the heat.
  7. Spray a 9x13 baking dish with nonstick cooking spray, Ladle a couple good scoops of sauce into the bottom of the baking dish, and arrange 4 noodles across. Add another couple good scoops of the chicken sauce mixture, then top with 1 cup shredded mozzarella. Repeat, until you scrape out the last of the sauce and top with any remaining mozzarella on the top layer.
  8. Spray a large sheet of foil with nonstick baking spray and arrange it, spray side touching cheese, over the casserole. Bake in the preheated oven for 40 minutes. Remove the foil. Increase heat to broil, and broil about 3-5 minutes (keep a close eye on it) to lightly brown the cheese.
  9. Remove lasagna from the oven and allow to rest 20-30 minutes to help the layers set, before slicing and serving!
