I love Chick Fil A's chicken salad - and a year or two ago I attempted a recipe to recreate that. This is essentially an iteration of that same recipe. Their chicken salad is very finely processed - it's not thick and chunky. It's more smooth and uniform since the food processor grinds everything up. It holds together really well and makes for a hearty and tasty sandwich! Or if you're skipping the carbs, just enjoy a bowl of it. It's protein packed and delicious!

Leftover Turkey Salad (Sandwiches)
2 cups cooked turkey (white and/or dark mixed), rough chopped
3 stalks celery, diced
1/4 tsp black pepper
1/2 tsp garlic powder
2 hardboiled eggs, chopped
2/3 cup mayonnaise
1 tsp yellow mustard
Directions
- Combine all ingredients in a food processor and pulse a little at a time until mixture comes together (as fine or rough as you prefer).
- Taste and adjust seasonings / mustard / mayonnaise as desired.
- Serve on bread with your favorite toppings - lettuce, tomato, pickles, etc.! Or add to a bed of lettuce with a drizzle of your favorite dressing.
Love chicken/turkey salad. Great way to use up leftovers.
