#BundtBakers ~ Easy Vanilla Bundt Cake

Our hostess this month is Patricia from Patty's Cake, and she invited us to get creative with post-Holiday belt tightening with just FIVE ingredients for today's bundt cakes.

This cake is simple - and it was definitely not what I was expecting. To be honest I had no idea what to expect! It was reminiscent of angel food cake, but a little more dense. It had a spongy consistency - and really called for some juicy macerated berries for added moisture and texture. It's a wonderful "base" to play with; I think serving this as the base to strawberry shortcake would be perfection!

Easy Vanilla Bundt Cake from Butter with a Side of Bread

Ingredients
1 1/2 cups granulated sugar
6 large eggs
1 1/2 cups all-purpose flour
2 tsp vanilla extract

Topping: Powdered Sugar
Serving suggestion: Macerated Strawberries and Cream

Directions
  1. Preheat oven to 350 degrees.
  2. Blend eggs and sugar on medium-high speed in the bowl of a stand mixer until lightened in color and well combined. Reduce speed to low and add in the vanilla and flour just until combined - do not overmix.
  3. Spray a bundt pan generously with baking spray and add in the batter.
  4. Bake in preheated oven for 40-60 minutes (check at 40 minutes for doneness, and continue baking until a skewer inserted into the center of the cake comes out clean).
  5. Allow to cool about 15 minutes before inverting onto cooling rack, and completing the cooling process.
  6. Dust with powdered sugar before slicing and serving if desired.
I recommend serving this with something like macerated strawberries for added moisture. The texture is reminiscent of angel food cake.

  5. This would be perfect with macerated berries and maybe some whipped cream. You had me at denser angel food cake. It sounds ideal!
