#FoodieExtravaganza ~ Eggnog Banana Bread

This bread is super tasty - I really enjoyed this recipe!! However, I think the recipe needs to be doubled for a full size loaf pan. The original recipe says makes 2 loaves, so I halved it, but then I ended up with a pretty thin loaf, so I'd stick with the full recipe in a single pan next time! There is a hint of eggnog that comes through, and the texture is lovely, with a touch of banana. My 4-year old has had multiple helpings of this one, so it's small-child-who-really-doesn't-like-solid-food-often approved as well!

Eggnog Banana Bread from Carrie's Experimental Kitchen 
Makes 1 loaf

Ingredients
1 cup all purpose flour
1/2 tsp. baking soda
1/4 tsp salt
1 1/2 medium ripe bananas, mashed
1/4 cup eggnog
1/4 cup vegetable oil
1/2 cup granulated sugar
1 small egg
1 tsp freshly ground nutmeg
Baking Spray

Directions
  1. Preheat oven to 350 degrees. Prep loaf pan with baking spray.
  2. Combine all ingredients in the bowl of a stand mixer and combine, just until blended.
  3. Spread batter into a loaf pan, bake in preheated oven for about 50 minutes, or until golden brown and toothpick inserted in the middle comes out clean.
