Slow Cooker Sweet and Sour Pork



We really enjoyed this delicious, and easy, sweet and sour recipe over some steamed brown rice with some broccoli on the side. It was hearty, filling, just the right amount of sweet, and I loved the sauce and the pineapple with the super tender pork roast. Definitely an easy and tasty way to end the day!

Slow Cooker Sweet and Sour Pork from Coleen's Recipes

Ingredients
2-3 pound lean pork roast
1 cup granulated sugar
½ cup white distilled vinegar
4 TBS soy sauce
4 TBS ketchup
20-ounce can crushed (or diced) pineapple (drained; reserve juice for a later use if desired)

Directions
  1. Brown the pork roast on all sides and put it in your slow cooker. Mix everything else, except the pineapple, and bring it to a boil, then pour it over the meat.
  2. Cook on high for 4-6 hours, or low for 8-10 hours or until very tender spooning the sauce over the meat every once in awhile to keep everything flavorful and moist. One hour before meat is done cooking, stir in the pineapple.
  3. If you want to have a thicker sauce to serve with the meat: once the meat has cooked, remove it from the crock pot, cover and set aside to keep warm. Pour the juices from cooking into a medium sized pot. Combine 1 TBS of cornstarch with about 1/2 TBS of water to create a slurry, and briskly whisk the mixture into the juices. Turn the heat under the pot to high and whisk regularly until the mixture begins to boil. Reduce heat to low, and allow to simmer until it reaches the desired consistency, whisking as needed.
