So back in January, I baked up these delicious chocolate muffins and mentioned my back pain as I was healing from throwing it out again after a diving injury the previous July. Well... here we are in April and I am yet again recovering from a back injury after throwing it out a couple weeks ago (AGAIN) and I am sharing with you yet another delicious chocolate studded muffin! I think I'm sensing a trend... no more chocolate muffins...? Nahhh... that's not it. Maybe I should actually consult a doctor and see what I need to do about this back stuff. I'm too young for this! Or am I...

Back issues aside - this is such a lovely muffin recipe! It's a little bit on the cupcake side (I mean it's chock full of chocolate so there's that) - the interior is fluffy and studded with tender bits of chocolate and we all loved it! You could certainly enjoy one for a breakfast treat - or an afternoon snack - or an evening dessert! My daughter had a great time helping me stir up the batter and mix those chocolate chips in (and steal a few first).


Chocolate Mocha Muffins from Inside Bru Crew Life

Ingredients
1/2 cup butter, softened
1/3 cup brown sugar
1/3 cup sugar
1 egg
2 teaspoons vanilla extract
2/3 cup sour cream
1/3 cup milk (I used vanilla almond milk)
1/3 cup strong brewed coffee, cooled
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup cocoa powder
2 cups all-purpose flour
1 cup milk or semi-sweet chocolate chips

Directions
  1. Preheat the oven to 400 degrees. This will make about 15-18 muffins, depending on how full you fill each cup. Prep 2 pans with at least 15 liners total, and add a couple more as necessary once you start filling.
  2. Cream the butter and both sugars in the bowl of a stand mixer until creamy and fluffy - a couple minutes total. Blend in the egg, vanilla, and sour cream. Blend until well combined.
  3. In a bowl combine the dry ingredients: baking powder, baking soda, salt, cocoa powder, and flour. Whisk to combine.
  4. Alternate the dry ingredients into the butter mixture with the milk and cooled coffee until all ingredients are combined into a thick batter. Blend just until combined.
  5. Stir the chocolate chips in with a spatula by hand.
  6. Divide the batter between the prepared liners (3/4 to all the way full). Bake in the preheated oven for 14-16 minutes, until a toothpick inserted into the center comes out clean. Cool in the tins for about 10 minutes, then move to a cooling rack to complete cooling. 
  7. Enjoy warm (though mine peeled out of their wrappers better once fully cooled), store leftovers in a tupperware for up to a couple days if they last that long!

  2. Ugh, nothing worse than back pain. Have you tried chiropractic? I have had great relief. These chocolate beauties are sure to help soothe you.

  4. Yes it is difficult to have back pain. hope you are doing fine. This Chocolate mocha muffins looks delicious. My kids are crazy about chocolate I need to try it as they are at home.
