Pizza Quesadillas

I have been browsing Pinterest, a lot, lately and have gotten so many yummy ideas for meals and snacks! When I saw Pepperoni Pizza Quesadillas from Snixy Kitchen I was inspired to try out some pizza quesadillas at home. It looked like a great, quick weeknight meal that Kent would be able to help get ready and would come together easily.

We baked up some mozzarella sticks and fixed a Caesar salad to go along with these tasty treats! I love individual pizza dishes because they're so easy to customize for each person's personal tastes and preferences. Onion and peppers were added to Kenneth's, and Kent and I stuck with pepperoni, ground sausage, some chopped bacon, and mushrooms!

We have a handy dandy quesadilla maker for preparing these quick and easy treats, but you can use any griddle or skillet that is large enough for the tortilla to lay flat on it. Just flip after a few minutes of cooking (carefully!) and continue cooking on the other side until the cheese is melted and both sides of the tortilla are browned.

Pizza Quesadillas

Ingredients
8 (10-inch) flour tortillas
1 cup cheese (half cheddar, half mozzarella)
4 TBS pizza sauce (or spaghetti sauce), more for dipping
4 oz ground sausage, cooked
16 slices pepperoni
4 TBS sliced, canned mushrooms, drained

Directions

  1. Heat quesadilla maker. Place one tortilla on the bottom of the quesadilla maker and spoon a tablespoon of pizza sauce around, not quite to the edges.
  2. Layer on toppings ingredients, 1 oz sausage, 4 slices of pepperoni, 1 TBS of mushrooms (etc., use toppings of your choice and preference). Top with 1/4 cup of mixed cheese and add another tortilla on top. Close quesadilla maker and cook until cheese is melted, and tortillas are golden brown; about 5 minutes.
  3. Remove quesadilla to a large cutting board and use a pizza cutter to slice into 6 wedges.
  4. Repeat with remaining tortillas and filling ingredients.
  5. Serve with extra sauce on the side for dipping, if desired.
