Martha Chicken
This is a family favorite recipe from my Mother In Law that we've been using for years - it's a very simple breaded Parmesan chicken recipe that is very tasty! Kent (my 14 year old kiddo) has been working on finding recipes he's comfortable cooking in the kitchen without much supervision this past week since I returned to work full time. He's been a WONDERFUL helper and seems to really enjoy working in the kitchen. He's always very proud of what he's made and has done a great job! This chicken came out delicious. We served it with some pasta and peas for a complete and filling dinner.
We often halve this recipe, but you can always make the full amount of cracker mixture and freeze half of it for a quick meal another night. Also, I sliced these chicken breasts in half and they didn't need the full hour for cooking, so if you use thinner breasts make sure to adjust the cooking time so you don't dry them out.

Ingredients
8 chicken breasts
¾ cup grated Parmesan cheese
1 tsp salt
4 tsp parsley flakes
2 cups cracker crumbs
1/8 tsp garlic powder
1/8 tsp black pepper
½ cup margarine, melted
Directions
- Preheat oven to 350 degrees.
- Blend crackers, Parmesan cheese, parsley, salt, pepper, and garlic powder. Dip each piece of chicken in the margarine, then in the cracker mixture.
- Arrange in an open shallow pan or casserole dish. Pour remaining margarine over chicken and bake uncovered for 1 hour. (Do not turn chicken while baking).
