Easy Honey Mustard Mozzarella Chicken
This is a great and easy weekday chicken dinner. Kent, my fabulous kitchen helper, fixed this one mostly himself and had it baking in the oven when I got home from work last week. I helped with the second stage of adding bacon and cheese and getting it browned before serving, but the kiddo did everything else and did a very good job!
I love the combination of simple ingredients for a tasty, tangy, slightly sweet, and of course cheesy meal! We served this with Garden Pasta Salad for a complete meal. Kent enjoyed the leftover chicken the next day for lunch, and I took the pasta salad to work - I would call this dinner a success! :)

Ingredients
4 skinless, boneless chicken breast halves
3/4 cup honey
1/2 cup prepared mustard (yellow works fine, you can also use dijon or honey for different flavors)
lemon pepper to taste
4 slices bacon, cut in half
1 cup shredded mozzarella cheese

Ingredients
4 skinless, boneless chicken breast halves
3/4 cup honey
1/2 cup prepared mustard (yellow works fine, you can also use dijon or honey for different flavors)
lemon pepper to taste
4 slices bacon, cut in half
1 cup shredded mozzarella cheese
Directions
- Preheat oven to 375 degrees F.
- Place the chicken breast halves in a baking dish. Combine honey and mustard in a dish and drizzle evenly over chicken. Sprinkle with lemon pepper.
- Bake chicken 25 minutes in the preheated oven. Top each breast half with 2 bacon slice halves, and sprinkle evenly with cheese. Continue baking 10 minutes, or until chicken juices run clear, bacon is crisp, and cheese is bubbly. (I turn the oven to a lo-broil for the last 2-3 minutes to get the bacon a little crispy and the cheese lightly browned.)
One look at that and it would be devoured in an instant.
