Manly Steak Tacos

Hubby had been having a craving for Moe's the other day - he wanted a big, yummy, stuffed steak burrito! I had to admit that sounded pretty good but wanted to see how close I might be able to come at home.

I searched around on the internet for some ideas on what they use in their marinade and came up with: citrus, onion and garlic. Hmm... ok, I can handle that, I think!

So, I went home and threw a few things together and kept my fingers crossed it would come out yummy!

I started with olive oil, minced garlic, Tastefully Simple's Onion Onion seasoning, lemon and lime juice and an orange.



I poured the ingredients in over the steaks.

And then grated about 1 TBS worth of orange rind over the top (and then subsequently ate the orange)!

I put a lid on the Tupperware container and gave it a good shake! I put that in the refrigerator and let it marinade for about 2 hours.

After marinading and pre-heating the grill the steaks went on for about 10 minutes total (5 minutes on each side).



I diced the meat up into bite sized pieces and we taste tested to see how it had come out - the marinade was great! Probably not anything like Moe's, but that orange zest gave it a very nice, refreshing brightness that was perfect with the grilled meat!

Condiments were laid out and prepared!


I put the tacos together with a little bit of seasoned rice and seasoned black beans, lettuce, tomato, cheddar cheese, sour cream and some salsa and we were all happy and full campers!

Ingredients
1/4 cup olive oil
1 1/2 TBS lemon juice
1 TBS lime juice
1 TBS minced garlic
1 TBS minced onion seasoning (such as Tastefully Simple's Onion Onion)
1/2 large orange fresh grated rind (about 1 TBS)
1 lb steak (used round steak)
Tortillas
Toppings: shredded cheese, queso, salsa, lettuce, tomato, sour cream, beans, rice, etc.

Directions
1. Place steaks in a Tupperware, add olive oil, lemon and lime juices, minced garlic and orange rind. Shake well to combine and refrigerate for at least 1 hour, up to overnight if preferred for stronger flavor.

2. Pre-heat grill to medium heat and grill steaks for 5 minutes on each side, or until they reach desired doneness.

3. Allow to set for about 5 minutes before dicing into bite sized pieces.

4. Serve on your favorite tortillas with your favorite taco toppings!
