Pickle Roll Ups

I saw these little treasures over on Baking Junkie and thought they TOTALLY looked like something that was right up my alley! Pickles, cream cheese and ham! YES please! Looks like something I use to make all the time, especially when pregnant, for a quick snack - roll a slice of lunch meat and a slice of cheese around a pickle and chow down - like a bread-less sandwich! :D I'd never tried them with cream cheese before though and knew I'd enjoy this little snack.

Ham, cream cheese and some whole dills are all you need for this one!

I used a butter knife to make a mess of the cream cheese over the slice of ham! (mmm... messy is good!)

Laid the pickle at one end...

And wrapped it up!

I used the same butter knife to cut 4 large pieces.

Then the fun part!! Insert creamy, cheesy, salty, crunchy, yummy bites into mouth ... mmmm (and then repeat)!!

My husband thought these looked awful and was not even remotely interested in my little bite-sized goodies. But that worked for me, because I ate them all in about 2 minutes flat. This was a fun, easy and tasty snack and if you had pickle lovers coming over I absolutely think it would be a fun and easy appetizer to put out!

Recipe from Baking Junkie

Ingredients
10 slices of ham (rectangular in shape)
10 large dill pickles
2-3 ounces cream cheese

Directions
Using a paper towel, blot dry one piece of ham. Spread a thin layer of cream cheese on ham, then place a pickle at the edge. Roll and slice off ends. Slice remaining roll into 3-4 pieces. Repeat with remaining ingredients (you could make more or less depending on your needs). Chill until serving.

Serves: 10-15 as appetizers
