Dinner - Charcuterie & crab cakes (pepperoni, sliced cheese, crackers, marinated mushrooms, carrots, cucumbers, crack dip, cashews, pickles, olives, apples, bell peppers, strawberries, grapes, Mini crab cakes, Cucumbers with cream cheese & smoked salmon
Thurs. 1/1 NEW YEAR'S DAY!
Breakfast - Toasted English Muffins, fried eggs, bacon / sausage patties, cheese slices, hashbrowns, sauteed cinnamon apples
Dinner - ham / turkey, sweet potatoes, mac n cheese, broccoli, green beans, black eyed peas, garlic bread / rolls

Dinner - Chicken Alfredo w/ frozen peas, steamed cauliflower
Sat. 1/3
Dinner - Quinoa Bowls: roasted veggies (broccoli), sauteed chicken
Sun. 1/4
Dinner - Spaghetti, garlic toast, steamed green beans
Lindsey recently started care at Emily Program, a disordered eating clinic. She's been very open with everyone about her journey so I know she won't mind me talking a little about it here. We're working on better nutrition and eating together as a family for meals. It's been pretty chaotic with her ballet schedule these past few years, but now that she's decided to focus on her health our schedule is a little more stable in the evenings at least. The program has helped us tackle the things she's struggled with from multiple angles. She was diagnosed with eosiniphilic esophigitis earlier this year, so she has a lot of anxiety around eating for multiple reasons. It's been a source of discomfort and pain for quite awhile in addition to other anxieties she's working through.
One day at a time though - and we're starting with trying to make more consistent meal plans for dinner, and posting them on the refrigerator to help reduce anxiety about what's going to be served, and to help keep me organized from week to week. I'm enjoying taking the time to think through meals ahead of time, and reduce decision fatigue during the busy work week!
This week is Holiday week so obviously a little off from "norm" but that's part of it! Lindsey loves alfredo and spaghetti - so trying to make sure we have "friendly" meals for her mixed in with anything that might feel "new" and a little more challenging for her!
