Mushroom Swiss Bacon Burgers #SundayFunday

 These are fabulously easy, deliciously satisfying big ol burgers. My boys devoured them. They have everything you could hope for in a burger. Thick, meaty burger, toasty bun, piles of tender veggies, and of course some crispy bacon as a complement to that gooey cheese. It's a classic for a reason! You can even make the mushroom onion mixture up well in advance, refrigerate and pull it out at meal time to streamline the process! 

Mushroom Swiss Bacon Burgers

Ingredients
2 lbs ground beef
1 teaspoon seasoned salt
1/2 teaspoon black pepper
2 medium onions, sliced
16-oz mushrooms, sliced
1 TBS olive oil
1-2 TBS butter
salt and pepper to taste
5-6 burger buns
5-6 slices swiss cheese
10-12 slices bacon

Directions
  1. Heat olive oil and butter in a large nonstick skillet and add the sliced mushrooms and onion, cook unti very tender (about 15-20 minutes), adjusting heat as needed (medium to medium-low) and seasoning lightly with salt and pepper. 
  2. Scrape into a bowl and wipe out the skillet. Cook the bacon in the same skillet to desired crispiness, and then place on papertowels to drain.
  3. Mix the groundbeef with the seasoned salt and pepper, and form into 5-6 large patties.
  4. Drain off most of the excess bacon grease, but leave a light coating in the pan. Cook the burgers to your desired doneness, flipping when well browned (about 5 minutes).
  5. Remove from pan, add cheese to tops to melt.
  6. Meanwhile preheat oven to 350 degrees and toast buns for about 6 minutes, just until lightly toasted.
  7. Arrange hamburger patty with melted cheese on bottom bun, topping with a pile of mushrooms and onions, and of course bacon.
  8. Add BBQ sauce, mayonnaise, etc. and / or any other favorite toppings as desired!

  2. I love this classic combination, and I'm going to use your tip and make the mushroom/onion mixture ahead of time- that helps hurry the dinner along on a weeknight. Thanks!
