Today I'm sharing an incredibly delicious gingery cookie - if you like chewy ginger snap cookies that is what I was reminded of when I whipped these up. They are gorgeously crackly so very chewy, and that spice level is almost "hot" - it has a very warm flavor and feeling. These are the perfect cookies to enjoy with some tea! They have all the smell and taste of the Holidays - a wonderful treat to make and share for your Christmas baking!

I loved the opportunity to work with Millican Pecans on this recipe - I've never tried to add in ground pecans to a cookie recipe before, but they add a wonderful nuttiness and heartiness to these cookies! They go beautifully together!

Nutty Spiced Ginger Cookies

Ingredients
1 cup butter softened
1 ¾ cups sugar
¾ cup brown sugar
1 large egg
1/3 cup Liquid Malt Extract or molasses
1/3 cup ground Millican Pecans
2 ¾ cups flour
1 ¼ teaspoons baking soda
1 tablespoon cinnamon
1 tsp ground ginger
1 teaspoon ground cloves
2 teaspoons nutmeg
½ teaspoon salt

Directions
  1. Preheat the oven to 350 degrees and line two baking sheets with silpats.
  2. In the bowl of a stand mixer, cream the softened butter with the sugar and brown sugar until lightened in color, a couple minutes. 
  3. Turn the mixer turned off, scrape the malt extract or molasses into the bowl and start off on low speed and increase to high, scraping down the sides as necessary. Blend in the egg.
  4. Combine the dry ingredients in a medium bowl: ground pecans, flour, baking soda, cinnamon, ginger, cloves, nutmeg, and salt. Whisk to combine.
  5. Add the dry ingredients into the wet and blend slowly until dough comes together.
  6. Use a 1 1/2 TBS cookie scoop to scoop 12 dough rounds onto each prepared sheet; bake 10-12 minutes per tray - just until edges are starting to brown. 
  7. Cool on the sheet for about 2-3 minutes before moving from the tray to the cooling rack to complete cooling. 
  8. Repeat with remaining dough.
