Soft Italian Wedding Cookies for #ChristmasCookies

I loved this cookie!! They have such a wonderful almond flavor and just the right amount of icing and festive sprinkles. My baby baker had a WONDERFUL time helping with these cookies. She loves rolling balls of cookie dough to place on the baking sheets, and she especially loved icing the cookies and had a blast putting sprinkles all over them! 

The Sweets & Treats sprinkles are just perfect - I chose a traditional green and red mix, and a Frozen inspired mix as well, and both are just gorgeous, and delicious! Lindsey really liked eating the Frozen sprinkles, because they're a great size and have a wonderful sweet crunch!

The Adams Almond Extract is perfect in this cookie recipe - it has a strong clean flavor and it shines through in each bite. This cookie is definitely for those who love that almond flavor - but you can of course change up the flavor profile by changing the extract in both the cookie and icing and you will have limitless flavor options! I think a vanilla cookie with an orange icing sounds really lovely!

    Soft Italian Wedding Cookies
    Makes 30 cookies

    Ingredients
    3/4 cup butter
    1/2 cup sugar
    3 eggs
    1 teaspoon Adams vanilla
    2 teaspoons Adams almond extract
    3 cups flour
    1 Tablespoon baking powder

    Glaze
    1 to 1 1/2 cups sifted powdered sugar
    1 teaspoon Adams almond extract
    1 - 2 TBS milk (to thin)

    Topping
    ~ 1/4 cup Sweets & Treats Holiday Sprinkles

    Directions
    1. Preheat oven to 350 degrees. Line 2 baking sheets with silicone baking mats.
    2. Combine the butter and sugar in the bowl of a stand mixer and cream on high speed until light in color and fluffy, about 2 minutes.
    3. One by one, add in the eggs, scraping the sides down as needed, until fully incorporated.
    4. Add in the extracts and blend.
    5. Add in the flour and baking powder and blend on low speed until dough comes together. Finish by hand with a spatula, scraping the sides and bottom.
    6. Use a 1 1/2 TBS cookie scoop to scoop rounds of dough out onto the prepared mats. You can roll the balls lightly by hand to smooth the surfaces.
    7. Baked 1 tray at a time in the preheated oven 9-10 minutes, until bottoms are lightly browned and tops look dry. 
    8. Cookies should not spread much at all. You can move cookies from baking sheets to cooling straight out of the oven, they should hold together well.
    9. Repeat process until all cookies are baked. Allow them to cool completely.
    10. Prepare glaze by whisking together the sifted powdered sugar, almond extract, and enough milk to reach a glaze that you can spread but isn't too thick, but definitely not too thin / runny either. It needs to be thick enough for the sprinkles to stick to it.
    11. Either dip the tops of the cookies in the icing, or use a small spatula to distribute the glaze over the cookies then sprinkle on a bit of sprinkles while the glaze is still wet!
