Mushroom Crock Pot Chuck Roast
I love a perfectly tender, saucy pot roast! It's one of my favorite things to "set and forget" on a work day. Walking in the door to the smell of dinner already prepared has to be a one of the best things for a working mama!
This recipe is superbly simple - a couple packets, some broth, some mushroom, an onion and you have a tasty and flavorful combination for a roast that goes really well with your favorite carb (rice, orzo, mashed potatoes, etc.) and a fresh veggie. I really liked this version! I thought about using a lipton onion soup mix, but skipped this time. If you want to plus-up the flavor profile give that a try and let me know what you think!
Mushroom Crock Pot Chuck Roast
Ingredients
1 4-oz can mushrooms, drained
1 packet brown gravy mix
1 packet mushroom gravy mix
2.5 lb chuck roast
1 14.5-oz can beef broth
1 medium onion, sliced into rings
Directions
- Combine ingredients in crock pot, cover and cook on high heat about 5 hours, or low on 8; or until meat is tender and shreds easily.
- Serve as desired (over rice, alongside mashed potatoes, with your favorite steamed veggies, etc.)
