#PumpkinWeek ~ Pumpkin Pie Energy Bites

Today we're sharing everything from Chili to Blondies with you to get your fall cooking and baking under way. I never, ever get tired of pumpkin goodies. I'm still daydreaming about this Pumpkin Chicken Stew and gorgeous pumpkin cake cake I made previously. Drool.


These energy bites come together in a snap and provide you a protein nutrient packed bite sized snack. They are great to whip up and keep in the fridge for everything from a on the go breakfast, to a game day snack, to an after school treat. They are versatile and you can play with the seasonings to get them just right for you. You can also tweak the texture (the original recipe calls for using a food processor on the dry goods, but I opted to leave everything whole), you can use dark or milk chocolate in place of white chocolate chips too! Make it yours.



Pumpkin Pie Energy Bites adapted from Joyful Healthy Eats

Ingredients
2 cups regular oats
½ cup ground flax seed
½ cup honey
½ cup pumpkin puree
1 tablespoon chia seed
2 teaspoon pumpkin spice mix
1 teaspoon vanilla extract
½ cup white chocolate chips

Directions

  1. Combine all ingredients in a large mixing bowl and stir with a wooden spoon or spatula to combine. Make sure mixture is evenly mixed before rolling.
  2. Divide and roll into about 14 1-inch balls. Place in Tupperware containers and refrigerate. They will hold together better once chilled.
