#PumpkinWeek ~ Pumpkin Chili

I apologize for the fact that these aren't the prettiest pictures - I took them in poor lighting when I was prepping the chili in the evening, and then the next day at the Chili Cook off at work when it was in the crock pot! I am going to have to make this recipe again, soon, because it was really tasty, and because I need better pictures! I loved the creamy texture the pumpkin adds to this dish, and for me this recipe contains the right ratio of meat to beans to veggies. I was really happy with it. Play with the seasonings to your taste - I will probably up the garlic a bit more next time. (Oh and Pumpkin Chili took 2nd place at the cook off this year - not too bad; we'll try again next year)!


Pumpkin Chili

Ingredients
2 lbs ground turkey
2 small onions, diced
2 bell peppers, diced
2 15-oz cans diced tomato (if you have them, replace with fresh diced tomatoes – about 3 small / medium per can replaced)
1 ½ cups chicken broth
2 TBS chili powder
1 TBS maple syrup
1 ½ tsp garlic powder
2 TBS minced garlic
2 15-oz cans pumpkin puree
3 15-oz cans kidney beans, drained and rinsed
½ tsp black pepper (more / less to taste)
1/2 tsp salt (more / less to taste)

Directions

  1. In the bottom of a large soup pot, brown the ground turkey along with the minced garlic, bell pepper, and onion until cooked through and veggies are starting to get tender; approximately 10-15 minutes.
  2. Add all remaining ingredients to pot. Stir, cover, and simmer on low about 2 hours.
  3. Adjust seasonings as needed.
