Easy Butter Biscuits




























Recently for a weekend breakfast I was looking for a quick and easy biscuit recipe to go alongside some grits, eggs, bacon, and sausage patties for a tasty, hearty meal for the boys. I decided to try out this super easy, and buttery, looking recipe I had seen on Pinterest. It came together in no time flat, and made one 8x8 pan. I only cut them into 4 large (man-sized) biscuits which worked well for our breakfast, but you can cut them into smaller pieces if you'd like. They were fairly thin, so not the easiest for slicing in half and adding goodies to the middle, but I still cut mine open and added some of my favorite blackberry jam. Delicious! My son really loved the flavor of these.

Easy Buttery Biscuits from Big Red Kitchen

Ingredients
4 TBS butter
1 1/4 cup flour
2 teaspoons sugar
2 teaspoons baking powder
1 teaspoon salt
2/3 cup buttermilk

Directions
  1. Preheat oven to 450 degrees. Slice up butter and place it on the bottom of an 8×8 inch baking dish. When the oven reaches 450 degrees place dish of butter in oven to melt for one minute. 
  2. Meanwhile mix together the flour, sugar, baking powder, and salt into a medium sized bowl. Slowly pouring in buttermilk and stirring until just blended. 
  3. Remove melted butter from oven and spread biscuit dough over melted butter with floured fingers.
  4. Using a dough cutter/scraper that had been dipped in flour, cut the biscuits into 4 or 9 even squares.
  5. Bake for 10-12 minutes until golden. Makes 4 or 9.

Note: recipe can be doubled and baked in a 9x13 inch dish for 13-15 minutes.
