Kodiak Protein Chocolate Chip Banana Muffins
These are lovely for breakfast meal prep and snacks to have on hand! My family really liked these (they literally disappeared in about 24 hours lol)! I originally made them because I bought a lot of the Kodiak pancake mix and was trying to think of other ways to use it besides my meal prep sheet pan panakes and thought muffins would work well - and they really did! They're only around 180 calories with about 8g protein each (less calories if you sub Splenda for the brown sugar if you prefer). 2 of these makes a lovely breakfast and I've already made a couple different versions. I'm going to be trying a pumpkin banana version next! I always have a freezer full of ripe bananas, so baking projects that use a couple are always welcome! :D
