Sweet Potato Breakfast Hash
This was a quick breakfast dish I served recently and really enjoyed! I love the addition of the tender sweet potatoes with the fluffy cheesy eggs and salty bacon. It's a lovely combination! You could certainly saute some onions and bell peppers and add those in with the eggs, or as another layer over the potatoes. I like mine served with a little ketchup!
Sweet Potato Breakfast Hash
Makes about 3 - 4 servings
Ingredients
2 large sweet potatoes
6 lage eggs
8 slices of center cut bacon
1/2 cup shredded cheddar cheese
salt and pepper to taste
olive oil, drizzle
Directions
- Preheat oven to 400 degrees and diced sweet potatoes in a small, even dice.
- Spread the diced potatoes onto a silpat lined baking sheet and drizzle with olive oil, salt, and pepper, Toss to coat.
- Bake in the pre-heated oven 15-20 minutes, or until roasted and tender.
- Meanwhile, in a large nonstick skillet cook the 8 pieces of bacon until they reach your desired crispiness and set aside to drain on paper towels. Once cool enough to handle, rough chop into large bite sized pieces.
- Drain off excess bacon grease from the pan, leaving just a little in the pan for the eggs.
- Whisk the eggs together in a medium bowl, and add a splash of water.
- Pour eggs into the hot pan (over medium to medium-high heat). Season with salt and pepper, to your preference. Cook with a spatula, scraping the bottom and sides of the pan as needed to keep eggs from sticking.
- Once the eggs are cooked through, remove them to a clean plate or bowl. Add the roasted sweet potatoes to the skillet, cover with the eggs, sprinkle with the cheese, and chopped bacon.
- Serve and enjoy!
