Southern Style Green Lima Beans

Today our #SundayFunday group is hosted by Culinary Cam who said "April 20th is Lima Bean Respect Day. Let's fête this much-maligned bean. Depending on where you find the beans, they may also go by one of the following names: butter peas, gigante beans, Madagascar beans, and chad beans."


This dish is SUPER easy and absolutely delicious. Use a good quality bacon, as the majority of your seasoning will come from that (I used Wright Brand Hickory Real Wood Smoked Thick Cut Bacon). The low and long simmering time really allows that bacon flavor to settle into the lima beans beautifully. This yields super tender, almost creamy lima beans that I could just sit and eat with a spoon (and may have done just that). It's a wonderful side dish - or a just because it sounds good meal in itself.

Southern Style Green Lima Beans

Ingredients 
2 slices bacon, diced
1 tsp minced garlic
1/2 tsp onion powder
1 tsp sugar
1/4 tsp black pepper
12 ounces frozen baby lima beans
1 ½ cups chicken broth or stock (more if needed)
salt to taste (if needed)

Directions
  1. In a soup pot, cook the bacon until crispy. Drain off any excess grease, and add in the minced garlic and saute for a minute. Add in the onion powder, sugar, black pepper, lima beans, and chicken broth. Stir to combine. Bring to a simmer, cover and reduce heat to maintain a low simmer for 30 minutes.
  2. Check beans, stir, add additional broth if needed, and simmer another 30 minutes (checking every 10 minutes or so to make sure there is at least a little liquid in the pot - you don't want them to be "brothy" but you don't want the pot to be dry and for the beans to burn).
  3. After the additional 30 minutes of simmering, taste and add salt or adjust seasonings if desired (I didn't add anything else to mine).
  4. Serve and enjoy!
