Sweet and Spicy Island Pork Tenderloin


This is such a WONDERFUL moist and tender pork tenderloin recipe. I doubled the recipe and made 2 (so we'd have leftovers)! It's definitely a little bit spicy, so use a little bit less Tabasco if preferred. 

We served this up alongside some steamed green beans and basic mashed potatoes for a easy, delicious, hearty weeknight dinner. I always forget how much I enjoy pork roast when I haven't made one in awhile. I tend to cook with a lot of chicken, but am going to have to make sure we include pork roasts more often. Lindsey seemed to enjoy this one too - which is always a huge win! 



Sweet and Spicy Island Pork Tenderloin

Ingredients
16 oz Lean Pork Tenderloin
1/2 tsp salt
1/4 tsp pepper
1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp cinnamon
1 TBS olive oil
1/4 brown sugar, packed
1/2 TBS minced garlic (or 1 tsp garlic powder if preferred)
1/4 - 1/2 TBS Tabasco sauce

Directions
  1. Preheat oven to 350 degrees.
  2. Stir together salt, pepper, cumin, chili powder, and cinnamon, then coat pork with the spice rub.
  3. Heat 1 tablespoon oil in a skillet over moderately high heat and brown pork, turning until all sides are browned, about 2 minutes per side. 
  4. Stir together brown sugar, garlic, and Tabasco and pat onto top of tenderloin. Place pork in a roasting pan and cook in the oven for 20 - 30 minutes or until cooked through and juices run clear (145 internal temperature, then allow to rest at least 3 minutes).
