Hawaiian Chicken for #OurFamilyTable

Today we're going Tropical! Christie from A Kitchen Hoor's Adventures said: "Bust out your beach gear! We're sharing tropical recipes with pineapple, coconut, mango, dragon fruit. Anything that screams tropical is on the menu today."
This is a deliciously flavored chicken recipe - it paired perfectly with some Hawaiian Fried Rice for a delicious tropical meal! Since we can't travel anywhere on a plane right now, traveling via our food is the next best thing. My daughter has been talking about visiting Hawaii for the past few months, so this was a fun way to talk about Hawaii and different flavor profiles. We've had this discussion about pizza before too - what makes Hawaiian pizza "Hawaiian" - it's all about the pineapple!
This is a deliciously marinated chicken recipe - perfect for grilling season. We served this up with some really tasty Hawaiian fried rice and it was the perfect end to the day - until we can actually enjoy some grilled chicken in Hawaii this will have to do!

Ingredients
2 lbs boneless, skinless chicken breasts
1/4 cup reduced sodium soy sauce
1/4 cup pineapple juice
1/4 cup brown sugar, packed
2 TBS ketchup
1 TBS minced garlic (jarred)
1 TBS ginger paste
1 tsp sesame oil
1 TBS cilantro paste

Hawaiian Chicken adapted from Damn Delicious
Ingredients
2 lbs boneless, skinless chicken breasts
1/4 cup reduced sodium soy sauce
1/4 cup pineapple juice
1/4 cup brown sugar, packed
2 TBS ketchup
1 TBS minced garlic (jarred)
1 TBS ginger paste
1 tsp sesame oil
1 TBS cilantro paste
Directions
- Combine all marinade ingredients in a ziploc bag or sealable container: soy sauce, pineapple juice, brown sugar, ketchup, minced garlic, ginger paste, sesame oil, and cilantro paste. Blend.
- Add chicken, turning or shaking to coat. Refrigerate at least a few hours, preferably overnight.
- When ready to grill, oil and heat a griddler or your grill. Grill chicken until cooked all the way through. Allow to rest a few minutes before slicing and serving!
