#SoupSaturdaySwappers ~ New Year's Soup


Welcome to the December 2019 Soup Saturday Swappers event, hosted by Cam at Culinary Adventures with Camilla and led by Wendy of A Day in the Life on Farm! Today we're sharing celebratory soups! Soups with sparkling wines in them, or that you would find on a festive Holiday celebration table. 


I decided to pick a New Year's soup to prepare and share. You've all heard about Hoppin' John for New Year's to bring good luck - full of black eyed peas, and the green vegetables are for financial prosperity. This soup combines those into a lucky dish to get your new year off to a great start. 

In addition to being lucky, it's pretty darn delicious too, and a hearty filling soup full of delicious vegetables in addition to the smoky ham and tender black eyed peas. It would be great served alongside a crusty bread to sop up the broth. 


New Year's Soup inspired by Sara Boyd Smith on AllRecipes

Ingredients
1 TBS olive oil
1 TBS minced garlic
3 lg carrots, peeled and diced
2 small onions, diced
4 14-oz cans broth (I used half vegetable, half chicken)
2 15-oz cans seasoned black eyed peas (undrained)
1 lb smoked ham, diced
8 oz collard greens, cleaned and chopped
1 tsp garlic powder
Salt and pepper to taste

Directions
  1. Heat olive oil in a large soup pot over medium heat. Add in the diced onion, diced carrots, and minced garlic. Saute about 5 minutes. Add in all remaining ingredients (add a few dashes of salt and pepper at this point).
  2. Stir once to combine and submerge the collards, place a lid on the pot and bring to a low simmer. Simmer 30-45 minutes, until collard greens are tender. 
  3. Taste, adjust the seasonings as needed before serving.
