Instant Pot Cheesy Ground Beef and Rice


This is an easy, comforting cheesy rice dish made simply in your Instant Pot. I have to make a lot of extra dishes at home for my son to have food throughout the day, and all-in-one rice, meat, and veggies dishes like this are definitely a favorite go-to for both of us! They don't mess up too many dishes for prep and cooking, store easily in tupperware, and reheat well for his lunches. (For those who don't know, my son had a stroke at age 16 and is doing as well as he can be, but is disabled and lives at home with me).

The tomato flavor is subtle, it just lends a little extra flavor to the dish; a can of diced tomatoes would probably be a nice addition, and some onion and mushrooms sauteed along with the ground beef! Instant Pot Cheesy Ground Beef and Rice adapted from This Is Not Diet Food

Ingredients
1 lb lean ground beef
14-oz can beef broth
2 cups milk
1 1/2 tsp salt
1 1/2 tsp pepper
2 tsp onion powder
2 tsp garlic powder
2 cups brown rice
10.75 oz condensed tomato soup
14-oz can green beans, drained
1 - 2 cups shredded cheddar cheese

Directions
  1. Set pot to saute, add about 1 TBS of butter. Once melted add the ground beef and stir occasionally until browned.
  2. Add in the beef broth, milk, salt, pepper, onion and garlic powders, brown rice, and tomato soup. Set steam valve to sealing and instant pot to high pressure cook and set for 22 minutes.
  3. Allow the pot to naturally release until it reads LO:10; then flip the valve to venting (if it hisses / spits liquid, set back to sealing and try again in a couple minutes).
  4. Stir in the cheese and green beans, until cheese is melted. Serve and enjoy!
