Baked Pierogi Casserole

I saw this one over at Loving Life when we had our Secret Recipe Club reveal just a little over a week ago, and knew I wanted to try it! I've had a box of pierogi's in my freezer, taunting me, for awhile now and just wasn't sure what to do with them! Anything with bacon and cheese seems like a good idea, so I decided this recipe would be just right.

The only issue I had is that mine seemed to get over baked and crunchy on top instead of tender like the ones at Kirstin's blog appeared to be. I'm partly sure that is because mine came from a box that had been in the freezer longer than it should have been, and I also had to leave mine in the oven longer than the time called for due to the sausages I was cooking taking longer than expected - but I am also wondering if I'd covered it with foil during baking if that would have helped keep everything gooey and cheesy and not so dried out. If I make this again, I will definitely add foil during baking (my sauce got pretty dried up and thick too, it just didn't seem like that's how it should have come out). However, despite my saucy issues, these were very good. My son in particular really enjoyed them and was excited to eat the leftovers! Bacon, pasta, cheese, and potatoes - you can't really go wrong! :)

Baked Pierogi Casserole from Kirstin at Loving Life


Ingredients
1 16oz. pkg. frozen Pierogis
2-3 slices bacon cooked and crumbled
1/3 c. cream cheese
1/2 c. chicken broth
1/4-1/2 cup shredded cheddar cheese
chopped green onions (optional)

Directions

  1. Preheat oven to 400 degrees. 
  2. Spray a 2 1/2 quart baking dish with cooking spray or use butter. Place pierogies in pan. 
  3. In a medium saucepan heat broth and cream cheese, stirring as you go till cream cheese is melted and mixture is smooth. Pour over Pierogies. Sprinkle with grated cheese and bake for 20-25 minutes. 
  4. Remove from oven and sprinkle with bacon and green onions (if using). Serve immediately.
