Slow Cooker Bacon-Wrapped Apple Chicken
This was a very interesting and tasty meal we enjoyed recently! I highly recommend using Sweet Baby Ray's barbecue sauce - it has been a favorite in our household for years and works great in this recipe. I also suggest using thick cut bacon if you have it. We used the full 5 small apples called for and ended up with a lot of "extra" apple pieces that seemed like too much to eat with just 4 pieces of chicken, so I would suggest using only 3 apples unless you know you like a LOT of topping with your chicken.
We served this up with some green beans and macaroni and cheese for a delicious dinner! The leftover reheated well too the next day for my lunch!
Slow Cooker Bacon-Wrapped Apple Chicken from Chef In Training
Ingredients
4 boneless skinless
chicken breasts 1 cup BBQ sauce
1/4 cup brown sugar
1/8 cup lemon juice
3 - 5 small apples peeled and chopped
8 slices bacon
Directions
- In a medium size bowl combine the BBQ sauce with the brown sugar, lemon juice, and diced apples.
- Wrap the chicken pieces with 2 slices of bacon each (secure with toothpicks if needed).
- Place the wrapped chicken in the bottom of a slow cooker and pour the barbecue / apple mixture over the top. Cook on low for 6-8 hours, or until chicken and apples are tender.
